If this wasn't cause enough for muffins, I had accidentally hurt my study buddy's feelings the other day and was feeling bad about it. So, this morning I brought us all some yummy vegan-friendly chocolate banana muffins.</p>
<p>4 large bananas (puree)<br>
3 tbsp oil<br>
1 tsp vanilla<br>
1/2 cup white sugar <br>
1/4 cup brown sugar <br>
1 1/2 cup all purpose flour<br>
2 tbsp cocoa powder<br>
1 tsp baking soda<br>
1 tsp baking powder</p>
<p>Mix wet and dry separately and then combine. 350°F for 20-25 minutes. Makes 12 muffins.</p>

The date went really well. Dan had never tried Indian food before but said it was really good. I'm already trying to think what I'll make next time I have him over for a nice dinner. Perhaps a nice leek soup with roasted root vegetables and a Nigella onion pie, paired with a pinot noir? Apple pie for dessert? Decisions, decisions.<br />
Of course, I now have tons of leftovers which I'll be freezing and eating over the next couple weeks.<br />

I'm back! Of course, I have been cooking within the past month though I've been a bit busy to post. Anyways, most of what I've been eating of late have been the standard pasta, miso soup, stir-fry, smoothies, and eggs that I always make.<br />
<br />
After class, I was desperately trying to find something for lunch as well as a way to use the zucchini that I had bought last week. I don't understand why zucchini isn't a more common addition to curries such as saags. The flavour blends right in with the spinach, but the texture of the zucchini just helps lend a lovely smoothness and a good helping of vitamin C.<br />
As you might be able to tell, chana saag curries are one of my favourite types of curry and I'm enjoying playing around with adding various other vegetables. I'd wanted to add an eggplant as well to this batch, but unfortunately my eggplant had turned off on the inside.<br />
<br />
I think I prefer this recipe over my <a href="http://opheliakitty.blogspot.ca/2012/10/chickpea-spinach-curry-vs-drunk-germans.html">last one</a>, but both are lovely as comfort food and rather filling. These past few weeks have been filled with assignments/ presentations and the weather's been getting rather cold, so some warm vegetable curry with a steaming cup of ginger pu'erh or chai are just what I'd been wanting to curl up with at the end of a day of classes.<br />

I started off by just frying up the zucchini, onion, and garlic with the curry paste and oil. While that was cooking until soft, I defrosted my spinach (and precooked chickpeas) in the microwave. Then just throw it all together, plop a lid on it, and let it cook for about 10 minutes on low.<br />

I've been looking for something fairly filling but low-calorie that I can grab in the morning before running out the door to my 8:30 classes. Last night, I stumbled across the <a href="http://weelicious.com/2010/03/01/oatmeal-on-the-go-bars/#">"oatmeal on-the-go bars" recipe</a> from <a href="http://weelicious.com/">Weelicious</a>, and so I tried them out. Overall, I'm pretty pleased with the results and my roommates seem to be fans.<br />

Miss Bitey-Boots has been in a bit of a mood today. We had tummy time and cuddles while I did my readings this afternoon, but she's been in a grump since. There's been a lot of stalking about and growling.<br />
Then, when I had Rebecca round for tea, we were all just sitting calmly on the bed when Ophelia woke up and decided to try to bite me. I jumped away, spilling green tea all over the bed. She then went grumbling off to go hide under the bed for a few hours. My bed now smells a bit like jasmine, but at least GrumbleCat has calmed significantly since dinner.<br />

I just got a bookshelf for my room and so I was sorting out my books on the bed. Ophelia felt that what I had meant by this was "Here, Ophelia. Sleep on all my things." I eventually managed to organize around her, which suited her just fine. Spoiled thing.</div>

Also, look Mum! I'm eating real food! I had Rebecca round for lunch today, so I made us a nice tofu and vegetable ginger garlic stir fry. Then for dessert, we finished off my nectarines and had a lovely vanilla green tea which I got back home. I'll have to remember to get more over the Christmas holidays. </div>

<span style="text-align: left;">Rebecca and I then ran some errands downtown (purchased a new kettle - yay!) and had dinner at her flat. It's nice to divide meals like that as a student. It keeps me from eating one proper meal and then either a) eating that identical meal for every lunch and dinner until the batch is done or b) eating one proper meal a day and then lots of nursery food for everything else.</span><br />

After dinner we watched a cool indie film called <a href="http://www.imdb.com/title/tt0907657/">Once</a>. It's really cool how the filming style and dialogue make it seem very realistic and organic. I also liked how, although in some ways it seems like a love story, it leaves things sort of open-ended for the characters. Starr<span style="font-family: Times, Times New Roman, serif;"><span style="line-height: 19px;">ing <a href="http://en.wikipedia.org/wiki/Glen_Hansard">Glen Hansard</a>, it also has me now listening to <a href="http://www.theframes.ie/">The Frames</a>.</span></span></div>

Ophelia wasn't too pleased to be leaving my parent's house, but I think she's mostly forgiven me for the six hour drive back to school. She quickly rediscovered sitting on the extra nightstand in my closet, though sadly that's where the laundry basket lives, so she's spent most of the morning sleeping under my desk or in the far corner under my bed.</div>
